GLUTEN-FREE RECIPES

TOLL-HOUSE CHOCOLATE CHIP COOKIES

1 Cup butter
3/4 Cup brown sugar
1/3 Cup granulated sugar
1 tsp. GF vanilla
Cream together the first 4 ingredients
Add 1 large egg (will make drier cookie; if you prefer softer cookies use 2 eggs)
Mix well.
2 1/4 Cups GF flour mixture
1 1/2 tsp. xanthan gum
1 tsp. salt
1 tsp. GF baking powder
1 tsp. GF baking soda
Combine above ingredients. Add to egg/sugar mixture. Mix well.
12 oz. GF chocolate chips (Nestle's)
Add. Mix well.
1 Cup chopped nuts (optional)
Drop by rounded teaspoon onto ungreased baking sheets. Bake @ 375 degrees for 10-12 min or until golden brown. Let stand 2 min. before removing to cooling rack ------- ENJOY!!!

GF flour

mix = 2 Cup white rice flour, 2/3 Cup potato starch flour, & 1/3 Cup tapioca flour.
Extra-good bread to use for French Toast --"Food for Life" brand --- GF Rice Almond Bread!!!

RICE POLISH PANCAKES

1/3 Cup rice polish (Ener-G)
2/3 Cup rice flour
1 tsp. GF baking soda
1/2 tsp. GF baking powder
1/2 tsp. salt
1 Cup buttermilk
2 T oil
1 beaten egg
Sift dry ingredients together. Add remaining ingredients and stir just until blended. Drop on lightly oiled griddle....

DIP FOR "GF" CORN CHIPS (or GF TORTILLA CHIPS)

1 8oz-block GF cream cheese
1 can GF refried beans
1 can chopped chilis
Chili powder - to taste
Soften cheese in the microwave. Add other ingredients, mix well and heat in microwave.

BROCCOLI-CHEESE SOUP

1/4 Cup margarine or butter
1/4 Cup chopped onion
1/4 Cup GF flour
3 Cups water and 4 GF bouillon cubes OR 3 Cups canned chicken OR vegetable broth (gluten-free)
2 10oz. pkgs. frozen broccoli (or fresh chopped broccoli)
1 tsp. Worcestershire sauce
3 Cups Cheddar cheese - shredded (8 oz brick - cubed)
2 Cups half & half (or 1 can evaporated milk)
Salt, pepper, season to taste.
Saute onion until tender in oleo. Add flour. Add broth, broccoli, and Worcestershire sauce. Cook over med. heat - stir until thickened and broccoli is tender (10 min.) Add cheese & cream (ev. milk).
DO NOT BOIL!
Cook and stir until hot........ENJOY!!!

BARBECUE SAUCE

1/3 Cup minced onion
2 T brown sugar
3 T butter or margarine
1/2 Cup water
1 Cup GF catsup
2 tsp. GF prepared mustard
1/3 Cup GF vinegar or lemon juice
2 T Worcestershire sauce
1/8 tsp. salt
Saute onion until tender. Add remaining ingredients; simmer, covered, 1o minutes. A little chopped red pepper adds a nice touch. Serve with your favorite meats. Makes 2 cups

TERRIYAKI MARINADE SAUCE

1 Cup GF soy sauce
1/2 tsp. ginger
3/4 Cup sugar
1/2 tsp. garlic powder
1/2 Cup water
Mix ingredients together. Place over meat to be marinated. Marinade 2 hours- Meats may be cooked in sauce. If desired, sauce may be heated thoroughly to be used as a condiment. Cook meats as desired.... Do not reuse sauce.
